Dry ingredients

1.25cupsold-fashioned oats

Wet ingredients
1cupunsweetened applesauce
0.5cupbuttermilk(or milk + vinegar mixture)
0.5cuppacked brown sugar
2tablespoonsavocado oil or melted coconut oil

2smallGala apples(chopped into small pieces)
1teaspoonturbinado sugar (optional)(for sprinkling on top)
Instructions
Preheat oven to 375°F (190°C). Line a muffin tin with liners or spray.
Mix dry ingredients in a large bowl. Whisk wet ingredients in a separate bowl.
Combine wet and dry ingredients, then fold in chopped apples.
Divide batter into muffin cups, filling ⅔ to ¾ full. Sprinkle with turbinado sugar if desired.
