These wholesome apple oatmeal muffins are perfect for a nutritious breakfast or snack, combining the sweetness of apples with hearty oats and warm spices.

Ingredients

Dry ingredients

  • 1.25 cups whole wheat flour
  • 1.25 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon fine salt
  • 0.5 teaspoon ground cinnamon

Wet ingredients

  • 1 cup unsweetened applesauce
  • 0.5 cup buttermilk (or milk + vinegar mixture)
  • 0.5 cup packed brown sugar
  • 2 tablespoons avocado oil or melted coconut oil
  • 1 large egg (lightly beaten)
  • 0.5 teaspoon vanilla extract

Add-ins

  • 2 small Gala apples (chopped into small pieces)
  • 1 teaspoon turbinado sugar (optional) (for sprinkling on top)

Instructions 

  • Preheat oven to 375°F (190°C). Line a muffin tin with liners or spray.
  • Mix dry ingredients in a large bowl. Whisk wet ingredients in a separate bowl.
  • Combine wet and dry ingredients, then fold in chopped apples.
  • Divide batter into muffin cups, filling ⅔ to ¾ full. Sprinkle with turbinado sugar if desired.
  • Bake for 16-18 minutes until golden. Cool and store in refrigerator or freezer.

Store in the refrigerator for best freshness. Muffins are best enjoyed within a day or two.
