  • 3/4 cup crisp, sweet apple, cut into small bite-size pieces (peeling is optional for less texture // we prefer Honeycrisp)
  • 3/4 tsp ground cinnamon
  • 1 Tbsp maple syrup
  • 1 pinch sea salt
  • 3/4 cup unsweetened plain almond milk (or sub other dairy-free milk of choice)
  • 1 Tbsp chia seeds
  • 1/2 - 1 Tbsp maple syrup (adjust sweetness to taste)
  • 1/2 tsp ground cinnamon
  • 2 Tbsp creamy unsalted cashew or almond butter
  • 1 tsp vanilla extract
  • 1/2 cup rolled oats (certified gluten-free as needed)

Instructions 

  • Cook chopped apples with cinnamon, maple syrup, and salt in a saucepan until soft, then simmer to create a syrup.
  • Mix almond milk, chia seeds, maple syrup, cinnamon, nut butter, and vanilla in a bowl, then stir in oats.
  • Layer cooked apples and oat mixture into jars, then refrigerate overnight.
  • Enjoy chilled or at room temperature within 2-3 days.
