These homemade apples cinnamon granola bars are a delicious and healthy snack, packed with nuts, dried apples, and warm spices.

Ingredients

Nuts and dried fruit

  • 1 cup raw pecan halves
  • 1 cup raw almonds
  • 1 cup raw cashews (or walnuts)
  • 1 cup old fashioned rolled oats
  • 1 Tablespoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon fine grain sea salt
  • 1 cup dried apples (chopped)
  • 1/4 cup coconut oil (melted) (refined for no coconut flavor)
  • 1/4 cup creamy nut butter (cashew butter recommended)
  • 2 Tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract

Instructions 

  • Line an 8x8 inch baking dish with parchment paper.
  • Pulse nuts in a food processor to chop, then transfer to a bowl.
  • Mix chopped nuts, oats, spices, and dried apples in a large bowl.
  • Combine coconut oil, nut butter, maple syrup, and vanilla; pour over dry ingredients and mix.
  • Press mixture into prepared pan and freeze for 30 minutes.
  • Cut into bars and enjoy!

Notes

Store bars in an airtight container in the fridge for best freshness.
