Creamy mashed potatoes infused with rich, nutty brown butter and topped with fresh chives and flaky salt for a comforting side dish.
Ingredients

(for brown butter)

peeled and chopped russet potatoes

warm half-and-half
1 1/2

kosher salt

garlic powder

Instructions
Melt butter in a small saucepan over medium-low heat; cook until golden and nutty, about 8-10 minutes. Set aside.
Cook potatoes in boiling salted water until tender, 15-20 minutes. Drain and mash until steam escapes, about 1 minute.
Gradually mix in 2/3 cup of warm brown butter while mashing. Add half-and-half, salt, garlic powder, and pepper; stir until smooth.
Spoon mashed potatoes into a serving bowl. Drizzle with remaining warm brown butter.
Top with sliced chives, flaky salt, and additional black pepper to taste.
Notes
For extra flavor, roast the garlic before adding or top with additional herbs.
