Instructions
Preheat oven to 400°F (200°C). Roast squash, garlic, and onion with olive oil, sage, salt, pepper, and nutmeg until tender, about 35 minutes.
Blend roasted vegetables with chicken stock, parmesan, and lemon juice until smooth.
Use immediately with cooked pasta or store in an airtight container in the fridge for up to 4 days or freezer for 4 months.
