A flavorful vegetarian pasta dish featuring roasted butternut squash, crispy sage, and Parmesan, perfect for a cozy dinner.

Ingredients

Vegetables

  • 1 medium butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper Salt and black pepper (to taste)
  • 12 ounces pasta (penne or fettuccine)
  • 1/4 cup unsalted butter
  • 12 fresh sage leaves sage leaves
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Zest of 1 lemon lemon zest
  • 1/4 cup toasted pine nuts (optional)
  • Fresh parsley, chopped parsley for garnish

Instructions 

  • Roast diced butternut squash at 200°C for 25-30 minutes until tender.
  • Cook pasta in salted boiling water until al dente; reserve 1/4 cup pasta water and drain.
  • Melt butter in a skillet, add sage leaves until crispy, then remove and set aside.
  • Sauté garlic in the skillet, add roasted squash, then toss with cooked pasta, Parmesan, and lemon zest. Add reserved pasta water if needed.
  • Serve garnished with crispy sage, pine nuts, and parsley.

Notes

For extra flavor, add a squeeze of lemon juice before serving.
