Instructions
Grate the carrots and add to a large bowl with apple, red onion, parsley, and mint.
Stir in raisins, pumpkin seeds, chia seeds, and lemon zest if using.
In a jar, combine vinegar, lemon juice, honey, olive oil, Dijon, salt, pepper, cumin, and red pepper flakes. Shake until emulsified.
Pour dressing over the salad and toss until evenly coated.
Let sit for 10–15 minutes to meld flavors. Serve chilled or at room temperature.
Notes
Adjust salt and honey to taste for desired tang and sweetness.
