A flavorful and easy-to-make cauliflower curry with aromatic spices, perfect for a quick vegetarian meal.

Ingredients

Vegetables

  • 1 medium head cauliflower (about 250 grams)
  • 2 tablespoons oil
  • ¼ teaspoon mustard seeds (optional)
  • ½ teaspoon cumin seeds
  • 1 sprig curry leaves (or bay leaf (optional))
  • 1¼ cups onions (finely chopped (about 2 medium))
  • 1 green chili green chili (slit or chopped (optional))
  • ½ tablespoon ginger (very fine chopped or 1 tsp grated)
  • ½ tablespoon garlic (cloves, very fine chopped or pressed)
  • 1 cup tomatoes (pureed or finely chopped)
  • ¾ to 1 teaspoon salt (adjust to taste)
  • ¼ teaspoon turmeric (haldi)
  • ½ to ¾ teaspoon red chili powder (e.g., 1 tsp Kashmiri chili powder)
  • 1 teaspoon garam masala (or curry powder)
  • ½ teaspoon coriander powder (optional)
  • ¾ to 1 cups water or coconut milk (I used 1¼ cup coconut milk)

Instructions 

  • Heat oil in a pan over low to medium flame. Add mustard, cumin, and curry leaves.
  • Add onions and green chili; sauté until golden, about 5-6 mins. Stir in ginger and garlic; sauté 30-60 seconds.
  • Add tomatoes and salt; cook until tomatoes break down. Mix in turmeric, chili powder, garam masala, and coriander; sauté until fragrant.
  • Add cauliflower florets; sauté 1-2 mins. Pour water or coconut milk; mix well.
  • Cover and cook until cauliflower is tender. Adjust seasoning; garnish with coriander leaves.

Notes

You can adjust the water and spices to suit your taste. Young cauliflower releases moisture, so add water gradually.
