Enjoy a healthy and flavorful meal with these stuffed peppers filled with cauliflower rice and lean beef, topped with melted mozzarella.
Ingredients
Bell Peppers
4largebell peppers(about 2 pounds)
2cupssmall cauliflower florets
2tablespoonsextra-virgin olive oil(divided)
½teaspoonsalt(divided)
¼teaspoonground pepper(divided)
½cupchopped onion
1poundlean ground beef
2clovesgarlic(minced)
½teaspoondried oregano
8ouncesno-salt-added tomato sauce
½cupshredded part-skim mozzarella
Instructions
Preheat oven to 350ºF (175ºC).
Steam the bell peppers until soft, about 3 minutes, then remove and set aside.
Pulse cauliflower in a food processor until rice-sized, then cook with 1 tbsp oil, salt, and pepper until browned, about 3 minutes. Set aside.
Cook chopped onion and remaining oil until softened, about 3 minutes. Add beef, garlic, oregano, salt, and pepper; cook until browned, about 5 minutes. Mix in tomato sauce and cauliflower rice.
Stuff peppers with cauliflower mixture, top with cheese, and bake for 20-25 minutes until heated through and cheese melts.
