A moist and flavorful bread combining the tartness of cranberries with the bright citrus notes of orange, perfect for breakfast or a snack.

Ingredients

Dough

  • 1 1/2 cups all-purpose flour (plus 1/2 tablespoon for coating cranberries)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk (room temperature)
  • 1 large orange (for zest and juice)
  • 1/4 cup orange juice (freshly squeezed)
  • 6 Tbsp unsalted butter (softened to room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 1/2 cups fresh cranberries (rinsed and dried)
  • 1 cup powdered sugar
  • 1 1/2 Tbsp orange juice (for glaze)
  • 1 tsp orange zest (reserved from orange above)

Instructions 

  • Preheat oven to 350°F. Butter and flour an 8½ x 4½-inch loaf pan.
  • Mix flour, baking powder, and salt. Combine milk, orange zest, and orange juice.
  • Cream butter and sugar, then add eggs one at a time. Alternate adding flour mixture and milk mixture to batter.
  • Toss cranberries with flour, fold into batter. Pour into pan and bake 45-50 minutes.
  • Cool in pan, then turn out. Mix powdered sugar, orange juice, and zest for glaze. Drizzle over cooled bread and set.

Notes

Ensure cranberries are coated with flour to prevent sinking.
