Ingredients

½yellow onion, diced

115 ozcan pumpkin puree
½cupchicken broth
115 ozcan cannellini beans, drained and rinsed
3cupsspinach
½cupGreek yogurt
½cupshredded mozzarella cheese
1optionalsqueeze lemon
Instructions
Heat a large skillet and add olive oil. Sauté diced onion until soft (~3-4 min), then add garlic for 30 sec.
Add ground turkey, herbs, salt, pepper, and cinnamon. Cook until nearly done (5-7 min).
Stir in chicken broth and pumpkin puree. Bring to boil, then simmer 3-4 min.
Add white beans and spinach. Cook 2-3 min until spinach wilts.
Turn off heat, stir in Greek yogurt and mozzarella until melted. Squeeze lemon if desired.
Notes
For extra flavor, add a squeeze of lemon before serving.
