Creamy Pumpkin Turkey Skillet with White Beans, Easy

A hearty and flavorful skillet dish combining lean turkey, pumpkin, and white beans, finished with creamy Greek yogurt and cheese for a comforting meal.

Ingredients

olive oil

  • 1 Tbsp extra virgin olive oil

vegetables

  • ½ yellow onion, diced
  • 3 cloves garlic, minced

protein

  • 1 lb lean ground turkey

herbs and spices

  • 1 Tbsp fresh thyme, chopped
  • 1 Tbsp fresh rosemary, chopped
  • ½ tsp cinnamon
  • ¾ tsp coarse kosher salt ((more to taste, start with ½ tsp if using fine table salt))
  • ¼ tsp black pepper

canned goods

  • 1 15 oz can pumpkin puree
  • ½ cup chicken broth
  • 1 15 oz can cannellini beans, drained and rinsed
  • 3 cups spinach
  • ½ cup Greek yogurt
  • ½ cup shredded mozzarella cheese
  • 1 optional squeeze lemon

Instructions 

  • Heat a large skillet and add olive oil. Sauté diced onion until soft (~3-4 min), then add garlic for 30 sec.
  • Add ground turkey, herbs, salt, pepper, and cinnamon. Cook until nearly done (5-7 min).
  • Stir in chicken broth and pumpkin puree. Bring to boil, then simmer 3-4 min.
  • Add white beans and spinach. Cook 2-3 min until spinach wilts.
  • Turn off heat, stir in Greek yogurt and mozzarella until melted. Squeeze lemon if desired.

Notes

For extra flavor, add a squeeze of lemon before serving.
