This creamy roasted garlic white bean soup is a comforting and flavorful meal, perfect for cozy days. It’s easy to make and customizable for vegan diets.

Ingredients

Roasted Garlic

  • 3 heads garlic (top 1/8 inch removed)
  • 2 tablespoons olive oil (for roasting garlic)
  • 1 tablespoon olive oil (for soup)
  • 1 onion diced onion
  • 3 cloves garlic (chopped)
  • 4 cups chicken broth (or vegetable broth)
  • 3 14.5 ounce cans white beans (rinsed and drained)
  • 2 teaspoons fresh rosemary (chopped (or 1 teaspoon dried))
  • 1/4 cup parmesan cheese (optional)
  • 1 tablespoon lemon juice

Salt and Pepper

Instructions 

  • Drizzle 1 tablespoon of olive oil over garlic heads, wrap in foil, and roast at 350°F for 60-90 minutes until soft. Cool and squeeze out cloves.
  • In a large pot, heat 1 tablespoon of olive oil. Sauté diced onion for 5-7 minutes until tender, then add chopped garlic and cook for 1 minute.
  • Add broth, white beans, and rosemary. Bring to a boil, then simmer for 5 minutes.
  • Squeeze roasted garlic into the soup and blend until smooth. Stir in parmesan and lemon juice, season with salt and pepper.

Notes

You can make this vegan by omitting the parmesan or using a dairy-free alternative.
