Fluffy, buttery biscuits made from scratch with simple ingredients, perfect for breakfast or a snack.
Ingredients
Dough

cups
all-purpose flour
(spooned & leveled (250 grams))

tablespoon
baking powder

teaspoon
baking soda

teaspoons
sugar
1
teaspoon
salt

tablespoons
cold unsalted butter
(cubed (85 grams))
¾
cup
cold buttermilk
(plus more for tops (180 ml))
Instructions
Preheat oven to 450°F (230°C). Line a baking sheet with parchment.
Mix dry ingredients, cut in butter until pea-sized, then add buttermilk and combine.
Pat dough into a rectangle, fold into thirds, and repeat folding twice.
Roll out to 1/2-inch thickness, cut with a floured 2.5-inch cutter, and place on baking sheet.
Brush tops with buttermilk and bake for 15-17 minutes until golden. Brush with melted butter if desired.
Notes
Do not overwork the dough for tender biscuits.
