A flavorful, dairy-free gluten-free cornbread stuffing perfect for holiday tables or cozy dinners. Easy to prepare with fresh herbs and vegetable broth.

  • 1 8x8 inch pan gluten-free cornbread, cubed and dried overnight or in the oven (see recipe notes below on how to dry cornbread)
  • 0.25 cup sunflower oil
  • 1 medium onion (diced (approximately 2 cups diced))
  • 1 rib celery (diced (approximately 2 cups diced))
  • 3 cloves garlic (minced (approximately 1 tablespoon minced))
  • 0.5 cup fresh parsley (chopped + more for garnishing)
  • 2 cups vegetable broth
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt and black pepper to taste

Instructions 

  • Preheat oven to 350°F (175°C).
  • Sauté onions, celery, and garlic in oil until tender (~5 minutes).
  • Add herbs and broth; simmer for 10 minutes.
  • Ladle broth over dried cornbread, mixing to absorb evenly. Season with salt and pepper.
  • Transfer to a baking dish and bake for 20-25 minutes until golden brown.

Notes

Ensure cornbread is dried properly to prevent mushiness.
