(about 15 medium, peeled and cubed)

Instructions
Place potatoes in a large pot, cover with water, and boil until tender, about 10-15 minutes. Drain and mash with butter and cream cheese.
Stir in sour cream, heavy cream, chives, parsley, garlic, thyme, salt, and pepper until well combined.
Transfer to a slow cooker and cook on low for 2-3 hours to meld flavors, or serve immediately.
Notes
For extra flavor, garnish with additional herbs before serving.
