A rich and flavorful gravy made from turkey giblets and drippings, perfect for holiday dinners or special occasions.

Ingredients

Meat and Broth

  • 1 unit Giblets and neck, saved from the uncooked turkey
  • 4 cups drippings from roasted turkey
  • 4 cups no-sodium chicken, turkey, or vegetable broth

Seasonings

  • Salt and pepper Salt and pepper

Thickening

  • 1/2 cup all-purpose flour (plus more as needed)

Instructions 

  • Simmer giblets and neck in water for 1 hour to make broth. Remove and chop giblets.
  • Separate turkey drippings, discard fat, and reserve liquid.
  • Make a roux with 1 cup of fat and flour in the roasting pan, cook until deep golden brown.
  • Whisk in drippings and broth, cook until thickened, about 5-8 minutes.
  • Chop giblets, add to gravy, season with salt and pepper, and serve hot.

Notes

Adjust broth and seasoning to taste for best flavor.
