Ingredients

Chicken

  • 2 pounds chicken thighs (bone-in, skin-on)
  • 1/2 cup extra virgin olive oil
  • 1 lemon lemon (juiced)
  • 4 cloves garlic cloves (minced)
  • 1 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne pepper ({optional})
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup finely grated cucumber
  • 1/2 cup thick whole milk Greek yogurt
  • 2 teaspoons lemon juice
  • 2 teaspoons extra-virgin olive oil
  • 1 clove garlic (grated)
  • ΒΌ teaspoon sea salt
  • 2 teaspoons chopped dill
  • 2 teaspoons chopped mint (optional)

Instructions 

  • Marinate the chicken with olive oil, lemon, garlic, herbs, spices, salt, and pepper for at least 20 minutes.
  • Grill the chicken over medium-high heat for 5-7 minutes per side until cooked through.
  • Prepare the tzatziki by mixing cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill, and mint. Refrigerate until serving.
  • Serve the grilled chicken with a dollop of tzatziki and enjoy.

Notes

Marinate the chicken for at least 20 minutes for best flavor, but longer marination enhances taste.
