Healthy Chicken Pot Pie Soup

A comforting and nutritious soup combining tender chicken, vegetables, and a creamy broth, perfect for a wholesome meal.

Ingredients

  • 1 tablespoon olive oil
  • 1.5 pounds uncooked boneless skinless chicken breast, diced
  • Freshly ground salt and pepper salt and pepper (to taste)
  • 0.5 tablespoon olive oil
  • 1 white onion chopped onion
  • 2 large carrots, sliced
  • 3 cups diced yukon gold potatoes
  • 3 cups finely chopped cauliflower florets
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 2 cups unsweetened almond milk, cashew milk, skim milk, 2% (for a richer soup, use whole milk)
  • 3 cups low sodium chicken broth
  • 0.5 teaspoon salt (plus more to taste)
  • Freshly ground black pepper black pepper
  • 1 cup frozen peas

Instructions 

  • Heat a large pot over medium-high heat, add 1 tablespoon olive oil, cook diced chicken with salt and pepper for 4-6 minutes until cooked through. Remove and set aside.
  • In the same pot, add 1/2 tablespoon olive oil, sauté onion, carrots, potatoes, cauliflower, and thyme for a few minutes. Add milk, chicken broth, salt, and pepper; simmer for 10 minutes until vegetables are tender.
  • Remove 3 cups of the mixture, blend until smooth, then return to the pot. Stir in cooked chicken and peas, simmer for 5-10 minutes to thicken. Adjust seasoning as needed.

Notes

For extra flavor, garnish with fresh thyme or black pepper before serving.
