Instructions
Heat olive oil in a large pot over medium-high heat. Sauté onion until translucent, then add garlic for 1 minute.
Add pasta, broccoli, mushrooms, tomatoes, sauce, stock, salt, pepper, oregano, and red pepper flakes. Stir to combine.
Bring to a boil, then reduce heat and simmer for 15-20 minutes until liquid is absorbed.
Turn off heat, add spinach, cover, and let sit for 5 minutes. Stir to combine.
Serve topped with freshly grated parmesan cheese.
Notes
Feel free to add more vegetables or adjust seasonings to taste.
