A delicious and healthy pumpkin cheesecake featuring Greek yogurt, perfect for fall gatherings or a nutritious dessert.

Ingredients

Dough

  • 1 1/2 cups Gluten Free Baking Flour (or regular oat flour)
  • 2 tablespoons coconut sugar
  • 2/3 cup extra virgin olive oil
  • 2 tablespoons unsweetened almond milk (or milk of choice)
  • 1/4 teaspoon salt
  • 1/2 cup Nonfat Greek yogurt
  • 1/2 cup Pumpkin Puree
  • 1/2 cup Greek Cream Cheese (or 1/3 less fat cream cheese)
  • 1 teaspoon Vanilla Extract
  • 2 drops Liquid Stevia (or zero calorie sweetener of choice)
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Ground Ginger
  • 1/4 teaspoon Nutmeg

Instructions 

  • Preheat oven to 350°F (175°C). Mix dry ingredients and combine with wet ingredients to form crust.
  • Press the crust mixture into a greased baking pan and bake for 10 minutes.
  • In a bowl, blend pumpkin, Greek yogurt, cream cheese, vanilla, stevia, and spices until smooth.
  • Pour filling over the baked crust and bake for an additional 20 minutes.
  • Allow to cool, then refrigerate for at least 2 hours before serving.

Notes

For a lower-fat version, use light cream cheese and Greek yogurt.
