Enjoy these wholesome pumpkin chocolate chip bars that are easy to make and perfect for a healthy snack or dessert.

Ingredients

dry ingredients

  • 2 1/2 cups oat flour (see notes)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons pumpkin pie spice (see notes)
  • 1/3 cup mini chocolate chips

wet ingredients

  • 1 heaping cup canned pumpkin puree
  • 1 tablespoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1/3 cup packed light brown sugar
  • 1 tablespoon unsalted butter (or sub canola oil)

Instructions 

  • Preheat oven to 350°F (175°C). Spray a 9x9 inch pan.
  • Mix dry ingredients in a large bowl.
  • Combine wet ingredients in a separate bowl and mix well.
  • Add wet to dry and stir until combined.
  • Pour batter into pan and bake for 15-18 minutes.
  • Cool slightly before cutting into squares and serving.

Store in an airtight container for best freshness.
