Instructions
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
Mix dry ingredients in a bowl. Beat butter and sugars until smooth, then add pumpkin, egg, and vanilla.
Gradually combine dry and wet ingredients. Fold in chocolate chips and walnuts.
Scoop dough onto baking sheets, about 1.5 inches apart. Chill remaining dough.
Bake for 11-12 minutes until edges are golden. Cool on racks before serving.
Notes
Chill dough for thicker cookies or to prevent spreading.
