Instructions
Preheat oven to 325°F and prepare a muffin tin with nonstick spray.
Mix oil, honey, and Greek yogurt; add egg and vanilla, blending well.
Stir in pumpkin purée, then add baking soda, spices, and salt; mix gently.
Fold in flour and oats until just combined, then scoop into muffin cups.
Bake for 24-29 minutes until a thermometer reads 200°F; cool before serving.
