3/4cupmilk(I used 1%)
2tablespoonsbutter(plus additional for cooking)
Dry ingredients
1 ½cupswhite whole wheat flour
2teaspoonsbaking powder
3/4teaspoonbaking soda
1/2teaspoonkosher salt
3/4teaspoonground cinnamon(*)
1/2teaspoonground ginger(*)
1/8teaspoonground nutmeg(*)
Pumpkin and eggs
3/4cuppumpkin purée(NOT pumpkin pie filling)
2largeeggs
2tablespoonspure maple syrup(or sugar or honey)
1teaspoonvanilla extract
Toppings and extras
Pure maple syrup
Butter
Chopped toasted pecans
Vanilla greek yogurt
Instructions
Whisk Greek yogurt and milk; let rest 5 minutes.
Melt butter; set aside to cool.
Mix dry ingredients in a large bowl.
Combine wet ingredients, whisk in melted butter, then pour into dry ingredients. Gently stir until just combined.
Cook pancakes on a preheated skillet until bubbles form, flip, and cook until golden. Keep warm if needed.
