A delicious and nutritious overnight oats recipe packed with protein and pumpkin flavor, perfect for a quick breakfast.

Ingredients

Dairy & Non-Dairy Milk

  • 120 g milk (almond or dairy) (Use dairy milk for higher protein)
  • 40 g old fashioned oats
  • 60 g pumpkin puree
  • 30 g vanilla protein powder
  • 1.5 tsp pure maple syrup (or to taste)
  • 1 tsp chia seeds
  • 1 tsp cinnamon
  • 0.5 tsp vanilla extract (optional)

Chopped nuts

  • optional chopped nuts (optional for topping (adds a nice texture))

Optional toppings

  • optional reddi whip & pumpkin pie spice (a little goes a long way)

Instructions 

  • Add all ingredients to a jar or bowl and mix well until combined. Taste and adjust sweetness if needed.
  • Cover and refrigerate for at least 2 hours, preferably overnight for best texture.
  • Serve topped with chopped nuts and optional whipped cream or spices if desired.
