A deliciously moist cake combining the sweetness of pears with warming ground ginger, perfect for a cozy treat.

Ingredients

Pears

  • 2 pieces Pears – 2 ripe but firm, peeled, cored, and sliced.

Self-raising flour

  • 225 grams Self-raising flour – 225g, for a light texture.

Ground ginger

  • 1 teaspoon Ground ginger – 1 teaspoon, for warmth.

Butter

  • 125 grams Butter – 125g, softened, adds richness.

Caster sugar

  • 125 grams Caster sugar – 125g, sweetens the cake.

Eggs

  • 2 large Eggs – 2 large, for structure.

Golden syrup

  • 2 tablespoons Golden syrup – 2 tablespoons, enhances sweetness.

Milk

  • 2 tablespoons Milk – 2 tablespoons, for moisture.

Pears (for decoration)

  • 1 piece Pears – 1 ripe, thinly sliced, for decoration.

Demerara sugar

  • 2 tablespoons Demerara sugar – 2 tablespoons, for a crunchy topping.

Instructions 

  • Preheat oven to 180°C (350°F). Grease and line a cake tin.
  • Mix flour and ground ginger in a bowl. Cream butter and sugar until light and fluffy.
  • Add eggs one at a time, then fold in the flour mixture, golden syrup, and milk.
  • Fold in sliced pears (reserve some for decoration). Pour batter into the prepared tin.
  • Arrange remaining pear slices on top and sprinkle with Demerara sugar. Bake for 45 minutes.

Notes

Use ripe but firm pears for the best texture and flavor.
