3cupsPink Lady apples (about 2 large, peeled and chopped)

Instructions
Preheat oven to 350ºF and coat an 8-inch springform pan with non-stick spray.
Mix flour, baking powder, and salt; set aside. Beat 1 ½ cups sugar, butter, cream cheese, and vanilla until blended. Add eggs one at a time, then mix in flour mixture.
Combine cinnamon with remaining ¼ cup sugar. Toss apples with 2 tablespoons of cinnamon sugar. Fold apples into batter, pour into pan, and sprinkle with remaining cinnamon sugar.
Bake for 75 minutes until edges pull away. Cool completely, then slice and serve.
