A creamy, dairy-free mashed potato recipe perfect for a comforting side dish. Made with vegan butter and broth for rich flavor without dairy.

Yukon gold potatoes
(peeled and cut into 1-inch cubes)

garlic
(peeled and smashed)

low sodium chicken broth
(or vegetable broth, plus more as needed)

vegan butter
(such as Earth Balance or Miyoko's)

mayonnaise
(classic, olive oil, avocado oil, or vegan mayo)
Instructions
Rinse the potatoes under cold water and drain.
Add potatoes and garlic to a pot, cover with water, and stir in 1 teaspoon salt. Bring to a boil and cook for 14–16 minutes until fork-tender.
Drain and return potatoes to warm pot to steam off moisture, then transfer to a bowl.
Add remaining salt, broth, vegan butter, and mayonnaise. Mash or whip until smooth, adding more broth as needed.
Taste and adjust salt. Serve hot.
Notes
For extra creaminess, add a splash of broth or vegan cream.
