A flavorful and customizable meal prep bowl featuring seasoned chicken, rice, peppers, and beans, perfect for quick lunches or dinners.

Ingredients

Protein

  • 2 cups shredded chicken (or leftover chicken) (from 1 pound boneless skinless chicken breasts)
  • 1 packet taco seasoning (or make your own with cumin, chili powder, and salt)
  • 0.5 cup white or brown rice (quinoa also works)
  • 2 teaspoons extra virgin olive oil
  • 1 red or yellow bell pepper bell pepper (sliced)
  • 1 small onion (sliced)
  • 1 teaspoon ground cumin (divided)
  • 1 teaspoon mild or medium chili powder (divided)
  • 1 (14-ounce) can black beans (drained and rinsed)
  • 2 limes limes
  • to taste sea salt or Kosher salt
  • to taste freshly ground black pepper
  • as needed Salsa or pico de gallo
  • as needed Sour cream or Greek yogurt
  • as needed Shredded cheese

Instructions 

  • Season and cook the shredded chicken with taco seasoning or spices.
  • Cook rice according to package, then stir in lime juice and salt.
  • Sauté sliced peppers and onions in olive oil with cumin, chili powder, salt, and pepper for 4-5 minutes.
  • Simmer beans with spices for 10 minutes or add plain beans with a pinch of salt.
  • Assemble bowls with layers of rice, peppers, onions, chicken, and beans. Add lime wedges and toppings before serving.

Prepare ingredients in advance for quick assembly during the week.
