A vibrant and healthy Mediterranean-inspired salad combining nutty farro, fresh herbs, and crunchy walnuts, perfect for a light lunch or side dish.

Ingredients

Dry grains

  • 1 cup dry farro
  • kosher salt kosher salt

Vegetables and herbs

  • 2 cups baby arugula
  • 1 cup cherry tomatoes, (halved)
  • 2 green onions green onions, (trimmed and chopped)
  • 1 bell pepper bell pepper (any color), (cored and chopped)
  • 0.75 cup walnut halves/pieces
  • 0.5 cup chopped fresh parsley
  • 0.25 cup chopped fresh mint
  • 0.25 cup chopped fresh dill
  • to your liking Feta cheese
  • 5 tablespoons Homemade Greek salad dressing

Instructions 

  • Cook the farro in boiling salted water for 20-40 minutes, then drain and let cool slightly.
  • Prepare the Greek salad dressing as per your recipe.
  • Combine the warm farro with arugula, tomatoes, onions, peppers, walnuts, and herbs in a bowl. Add dressing and toss to combine. Top with feta cheese.

Notes

Feel free to customize with your favorite herbs or add extra feta for more flavor.
