Ingredients

Dry Ingredients

  • 2 tablespoons paleo flour (such as Bob's Red Mill Paleo Flour, coconut flour, or almond flour)
  • 1 tablespoon vanilla protein powder
  • 1 tablespoon pumpkin pie spice

Wet Ingredients

  • 1 cup cashew butter (preferred Betsy's Best or any nut butter)
  • 1 tablespoon maple syrup (or honey)
  • 2 tablespoons pumpkin puree

Instructions 

  • Mix dry ingredients in a large bowl until evenly combined.
  • Warm cashew butter, maple syrup, and pumpkin puree in microwave for 30 seconds.
  • Pour wet mixture into dry ingredients and stir until a dough forms.
  • Freeze the dough for 10 minutes to firm up.
  • Shape into 20 balls and place on parchment-lined sheet.
  • Refrigerate until firm and store in an airtight container.
