Curry Paste

Pumpkin & Vegetables
4cupsCubed Pumpkin (kabocha/butternut) (or other squash/sweet potatoes)
1canCoconut Milk (almond milk can lighten the dish)
14ouncesExtra Firm Tofu (or chickpeas for texture)
Flavorings
1tablespoonLime Zest
2tablespoonsLime Juice (lemon juice works as a substitute)

Instructions
Heat oil in a large pot over medium heat. Add chopped shallots, garlic, and ginger; sauté until fragrant.
Stir in curry paste and cook for 1-2 minutes. Add pumpkin, coconut milk, tofu, lime zest, lime juice, sugar, salt, and lime leaves; simmer for 15 minutes until pumpkin is tender.
Remove lime leaves if used. Serve hot with rice or bread.
