Instructions
Heat coconut oil in a large pot over medium heat.
Add onion, garlic, and ginger; cook for 2–3 minutes until fragrant.
Stir in curry powder or paste; cook for 30 seconds.
Add pumpkin and stir to coat in spices.
Pour in coconut milk and broth; simmer for 15–20 minutes until pumpkin is tender.
Stir in lime juice, season, garnish with cilantro and chili, then serve hot.
Notes
Use canned pumpkin for convenience or fresh pumpkin for a richer flavor.
