One-Pot Pumpkin Lentil Soup

A hearty and flavorful soup combining pumpkin, lentils, and beans, perfect for a comforting meal.

Ingredients

olive oil

  • 2 tablespoons olive oil

vegetables

  • 1 cup chopped celery (large dice preferred)
  • 1 cup chopped onions

garlic

  • 2 tablespoons minced garlic

canned beans and tomatoes

  • 2 15 ounce cans black beans, drained
  • 2 15 ounce cans rotel

lentils

  • 1 cup dried lentils (any variety)

pumpkin

  • 1 1/2 cups pumpkin puree

liquids

  • 4 cups vegetable stock

spices

  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt

cilantro

  • 1 cup chopped cilantro (plus extra for topping)

Instructions 

  • Heat olive oil in a large pot, sauté celery and onions for 3-5 minutes, then add garlic and cook for 1 minute.
  • Add remaining ingredients and cook over medium heat for 25-35 minutes, adding water if needed.
  • Test and adjust seasoning as desired. Serve topped with cilantro and optional garnishes.
