Instructions
Heat olive oil in a large pot, sauté celery and onions for 3-5 minutes, then add garlic and cook for 1 minute.
Add remaining ingredients and cook over medium heat for 25-35 minutes, adding water if needed.
Test and adjust seasoning as desired. Serve topped with cilantro and optional garnishes.
