One Pot Pumpkin Turkey Chili Recipe

A hearty and flavorful chili combining pumpkin, turkey, and spices for a comforting meal.

Ingredients

Vegetables

  • 1 tablespoon olive oil (or avocado oil)
  • 1 large onion (chopped finely)
  • 1 cup carrots (chopped, about 2 large carrots)
  • 1 cup celery (chopped, about 2-3 celery ribs)
  • 1 bell pepper chopped bell pepper
  • 1 lb lean ground turkey
  • 4 large garlic cloves (minced)
  • 1 medium jalapeño pepper (optional for heat, minced)
  • 3 tablespoons tomato paste
  • 3 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon dried oregano
  • 1 tablespoon smoked paprika (or sweet paprika)

Canned Goods

  • 2 14.5-oz cans diced fire roasted tomatoes with green chiles
  • 3 15-oz cans beans (black, kidney and pinto beans, drained)
  • 1 15-oz can pumpkin purée

Liquids

  • 1-2 cups water (to cover)

Instructions 

  • Heat oil in a large pot, sauté onions, carrots, and celery until tender.
  • Add bell pepper and cook for 1-2 minutes. Push vegetables aside, cook turkey until no longer pink.
  • Stir in garlic, jalapeño, tomato paste, spices, salt, and pepper; cook briefly.
  • Add tomatoes, beans, pumpkin purée, and water; simmer uncovered for 20-30 minutes until thickened.

Notes

Adjust seasoning to taste and serve hot.
