Ingredients

Noodles

  • 8 oz thin rice noodles

Vegetables

  • 1 large carrot, thinly sliced
  • 1 small cucumber, thinly sliced
  • 2 cups red cabbage, thinly sliced
  • 3 green onions sliced

Herbs

  • ⅓ cup fresh cilantro or herbs

Optional toppings

  • chopped peanuts, sesame seeds, mung bean sprouts, mint, sriracha, avocado, shrimp, tofu, edamame (as desired)
  • ½ cup natural creamy peanut butter
  • 2 tbsp maple syrup or brown sugar
  • 1½ tbsp tamari or soy sauce
  • 2 tbsp fresh lemon or lime juice
  • 1–2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • ½ cup hot water (to thin)

Instructions 

  • Cook rice noodles according to package instructions. Rinse under cold water and drain.
  • Slice vegetables and chop herbs.
  • Mix peanut sauce ingredients, then whisk in hot water until smooth.
  • Assemble bowls: layer noodles, add veggies and herbs, drizzle with sauce, and top with desired toppings.
