Ingredients

Dough and Batter

  • 0.5 cup unsalted butter, softened (plus extra for greasing the pan)
  • 0.75 cup white sugar (granulated or caster)
  • 2 large eggs (beaten)
  • 2 teaspoons almond flavouring
  • 1.75 cups all-purpose flour (or gluten-free flour)
  • 1.5 teaspoons baking powder (gluten-free if needed)
  • 2 teaspoons ginger (adjust to taste)
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.5 cup buttermilk (or regular milk)
  • 2 to 3 medium pears (one peeled and chopped, others sliced)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons Demerara sugar (for garnish)
  • 1.5 cups icing sugar (confectioners or powdered sugar)
  • 2 to 3 tablespoons water or lemon juice (for glaze)

Instructions 

  • Preheat oven to 350°F (170°C). Grease an 8-inch cake pan.
  • Peel and chop one pear; toss with lemon juice. Slice remaining pears and toss with lemon juice. Set aside.
  • Cream butter and sugar. Add eggs and almond flavoring; beat well.
  • Sift together flour, baking powder, ginger, nutmeg, and salt. Mix into batter. Add buttermilk and combine.
  • Fold in chopped pear. Pour batter into pan, arrange sliced pears on top, sprinkle with Demerara sugar.
  • Bake for 30-35 minutes until golden and a skewer comes out clean. Cool, then glaze with icing sugar mixture.

Ensure pears are evenly distributed for a beautiful presentation.
