Instructions
Toss the butternut squash with spices and set aside.
Cook garlic and ginger in oil, add chicken and cook until white.
Add coconut milk, peanut butter, curry paste, honey, tomatoes, and squash. Simmer for 30 minutes until cooked and thickened.
Squish some squash to thicken the curry, then serve over rice with garnishes.
