A hearty and nutritious breakfast combining oats, pumpkin, and protein for a satisfying start to your day.

Ingredients

  • 2.5 cups old fashioned oats
  • 0.5 cup vanilla protein powder
  • 2 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup chopped pecans (or walnuts)
  • 1 cup pumpkin puree
  • 0.5 cup plain Greek yogurt
  • 0.5 cup milk (or milk alternative)
  • 1/3 cup maple syrup
  • 2 eggs whisked eggs
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 1 tbsp milk

Instructions 

  • Preheat oven to 350°F (175°C). Line a 9x9 inch baking dish with parchment paper or spray with oil.
  • Mix oats, protein powder, flaxseed, cinnamon, pumpkin pie spice, salt, and baking powder in a large bowl.
  • Add pumpkin, Greek yogurt, eggs, vanilla, and maple syrup; mix until combined. Fold in pecans.
  • Pour batter into the prepared dish and bake for 30-35 minutes until set.
  • Cool slightly, then drizzle with glaze and top with chopped pecans before slicing.

Notes

For best results, use parchment paper for easy slicing and cleanup.
