A cozy and flavorful one-skillet pumpkin lasagna perfect for fall evenings, combining hearty turkey, pumpkin, and cheesy goodness.

Ingredients

olive oil

  • 0.5 tablespoon extra virgin olive oil

ground turkey

  • 0.5 pound 93% ground turkey

yellow onion

  • 0.5 yellow yellow onion (diced)

garlic

  • 3 cloves garlic (chopped)

red pepper flakes

  • 0.25 teaspoon red pepper flakes

kosher salt

  • 1 teaspoon kosher salt (divided)

fresh sage

  • 2 teaspoons fresh sage (chopped)

thyme leaves

  • 1 teaspoon thyme leaves (fresh)

pumpkin puree

  • 15 ounce can pumpkin puree

chicken broth

  • 3.25 cups chicken broth (or chicken bone broth)

lasagna noodles

  • 8 ounces lasagna noodles (broken into bite sized pieces)

part-skim ricotta cheese

  • 0.5 cup part-skim ricotta cheese

parmesan cheese

  • 0.25 cup parmesan cheese (divided)

mozzarella cheese

  • 0.75 cup grated part-skim mozzarella cheese

parsley

  • for garnish Chopped parsley

Instructions 

  • Heat a large oven-safe skillet over high heat, then add olive oil, turkey, onion, garlic, salt, and chili flakes. Cook until turkey is browned, about 5-7 minutes.
  • Add sage and thyme; cook until fragrant, about 1 minute. Stir in pumpkin, broth, and remaining salt; simmer. Add noodles, ensure they're submerged, and cook until tender, 18-20 minutes.
  • Remove from heat, stir in ricotta and 2 tbsp parmesan. Top with mozzarella and remaining parmesan. Broil until cheese is melted and browned, 2-3 minutes. Garnish with parsley and serve.

Notes

Use fresh herbs for best flavor and keep an eye on the broiling step to prevent burning.
