Instructions
Heat a large oven-safe skillet over high heat, then add olive oil, turkey, onion, garlic, salt, and chili flakes. Cook until turkey is browned, about 5-7 minutes.
Add sage and thyme; cook until fragrant, about 1 minute. Stir in pumpkin, broth, and remaining salt; simmer. Add noodles, ensure they're submerged, and cook until tender, 18-20 minutes.
Remove from heat, stir in ricotta and 2 tbsp parmesan. Top with mozzarella and remaining parmesan. Broil until cheese is melted and browned, 2-3 minutes. Garnish with parsley and serve.
