These moist and protein-packed pumpkin muffins are perfect for a healthy snack or breakfast. Easy to make and full of warm spices, they are a delicious treat.

Ingredients

Wet ingredients

  • 2 large eggs
  • 120 g pumpkin puree
  • 64 g creamy all-natural almond butter
  • 57 g plain Greek yogurt ((2%))
  • 2 tbsp milk ((2%, whole, or almond))
  • 30 ml pure maple syrup
  • 1 tsp vanilla extract
  • 36 g coconut sugar
  • 140 g super-fine almond flour
  • 40 g protein powder
  • 2.5 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 0.5 cup chocolate chips ((optional))

Instructions 

  • Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  • Whisk eggs, pumpkin, almond butter, and yogurt until smooth. Add milk, maple syrup, vanilla, and coconut sugar; mix well.
  • Stir in almond flour, protein powder, spices, and baking powder until just combined.
  • Fold in chocolate chips if using. Divide batter into muffin cups, filling about two-thirds full.
  • Bake for 18–20 minutes until a toothpick comes out clean. Cool before serving.

Notes

Store in an airtight container for up to 3 days or freeze for longer storage.
