Instructions
Sauté diced onion and bell pepper in a large pot with nonstick spray for 7 minutes. Add garlic and cook 30 seconds.
Add ground turkey and cook 6-7 minutes until fully cooked, breaking it apart.
Stir in beans, tomatoes, tomato paste, pumpkin, broth, spices, and seasonings. Simmer for 20-30 minutes, stirring occasionally.
Just before serving, stir in spinach until wilted. Serve hot with toppings like avocado, yogurt, cilantro, or salsa.
