A hearty and flavorful chili combining pumpkin and turkey, perfect for a cozy meal with a hint of spice.

Ingredients

Vegetables

  • 1 large yellow onion (diced (~2 cups))
  • 1 medium bell pepper (red, yellow, or orange, diced)
  • 6 cloves garlic (minced)

Meat

  • 1.33 pounds ground turkey (90-94% lean)

Canned Goods

  • 1 can white beans (15-ounce, drained and rinsed)
  • 1 can diced tomatoes (28-ounce with liquid)
  • ¼ cup tomato paste
  • 1 can pumpkin puree (14-ounce)
  • 1 cup reduced-sodium chicken or vegetable broth

Spices and Seasonings

  • 2 tablespoons chili powder
  • 1 tablespoon cocoa powder
  • 1.5 teaspoons ground cinnamon (or pumpkin pie spice)
  • 2.5 teaspoons ground cumin
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon cayenne pepper (optional for heat)

Additional

  • 4 cups spinach leaves

Optional toppings

  • Avocado, Greek yogurt, cilantro, salsa (for serving)

Instructions 

  • Sauté diced onion and bell pepper in a large pot with nonstick spray for 7 minutes. Add garlic and cook 30 seconds.
  • Add ground turkey and cook 6-7 minutes until fully cooked, breaking it apart.
  • Stir in beans, tomatoes, tomato paste, pumpkin, broth, spices, and seasonings. Simmer for 20-30 minutes, stirring occasionally.
  • Just before serving, stir in spinach until wilted. Serve hot with toppings like avocado, yogurt, cilantro, or salsa.
