A hearty and flavorful skillet combining lean turkey, pumpkin, and fresh herbs for a comforting meal.

Ingredients

olive oil

  • 1 Tbsp extra virgin olive oil

vegetables

  • ½ yellow onion yellow onion, diced
  • 3 cloves garlic, minced

protein

  • 1 lb lean ground turkey

herbs and spices

  • 1 Tbsp fresh thyme, chopped
  • 1 Tbsp fresh rosemary, chopped
  • ½ tsp cinnamon
  • ¾ tsp coarse kosher salt
  • ¼ tsp black pepper

canned goods

  • 1 15 oz can pumpkin puree
  • ½ cup chicken broth
  • 1 15 oz can cannellini beans, drained and rinsed
  • 3 cups spinach
  • ½ cup Greek yogurt
  • ½ cup shredded mozzarella cheese
  • squeeze lemon (optional) lemon (optional)

Instructions 

  • Heat a large skillet on medium heat and add olive oil.
  • Add diced onion and saute until soft (~3-4 min). Add garlic and cook 30 sec.
  • Add ground turkey, herbs, salt, pepper, and cinnamon. Cook until nearly done (5-7 min).
  • Stir in chicken broth and pumpkin puree. Bring to boil, then simmer 3-4 min.
  • Add beans and spinach; cook 2-3 min. Turn off heat and stir in Greek yogurt and cheese until melted.
  • Optional: squeeze lemon on top before serving.
