Enjoy these flavorful vegetarian tacos featuring roasted butternut squash and black beans, perfect for a quick and healthy meal.

Ingredients

Vegetables

  • 5 cups diced butternut squash (peeled, seeded and diced)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon granulated garlic
  • 0.25 teaspoon black pepper
  • 1 can (15 oz) black beans (drained and rinsed)

Tortillas

Optional toppings

  • avocado, lettuce, salsa, tomato, etc. (as desired)

Instructions 

  • Preheat oven to 400°F (200°C). Toss butternut squash with olive oil and spices, then roast for 40 minutes, flipping once.
  • When squash is 5 minutes from done, add black beans to the sheet pan and stir. Roast until squash is tender.
  • Fill tortillas with roasted squash and beans, then top with your favorite toppings.

Notes

For extra flavor, add fresh cilantro or a squeeze of lime.
