Ingredients

diced butternut squash
(peeled, seeded and diced)

olive oil

black beans
(drained and rinsed)
Tortillas
Optional toppings
avocado, lettuce, salsa, tomato, etc.
(as desired)
Instructions
Preheat oven to 400°F (200°C). Toss butternut squash with olive oil and spices, then roast for 40 minutes, flipping once.
When squash is 5 minutes from done, add black beans to the sheet pan and stir. Roast until squash is tender.
Fill tortillas with roasted squash and beans, then top with your favorite toppings.
Notes
For extra flavor, add fresh cilantro or a squeeze of lime.
