Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, cumin, smoked paprika, cinnamon, salt, and pepper. Roast for 25-30 minutes until tender.
Meanwhile, rinse quinoa and cook in vegetable broth or water for about 15 minutes until fluffy. Let cool slightly.
Assemble the bowls by dividing cooked quinoa, roasted sweet potatoes, black beans, corn, diced avocado, red onion, and cilantro. Squeeze lime wedges over the top.
For the dressing, whisk together olive oil, lime juice, maple syrup, Dijon mustard, garlic powder, salt, and pepper. Drizzle over the assembled bowls.
