Slow Cooker Turkey Soup

A hearty and comforting turkey soup made effortlessly in the slow cooker, perfect for cozy meals.

Ingredients

Vegetables

  • 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 3 stalks celery, diced
  • 3 large carrots, peeled and sliced into 1/4-inch rounds
  • 1 medium white or yellow onion, diced
  • 3 cloves freshly minced garlic
  • 8 cups low sodium chicken broth
  • 1.5 teaspoons poultry seasoning
  • 3 cups precooked shredded turkey or chicken
  • 0.75 to 1 cup heavy cream or half and half (Adjust to taste)
  • 2 tablespoons olive oil or butter
  • to taste Salt and freshly ground black pepper

Optional Add-ins

  • 1 cup frozen peas or corn (Add during last 10-15 minutes)
  • a handful chopped kale or spinach (Add during last 10-15 minutes)

Instructions 

  • Chop vegetables and mince garlic. Optionally, sauté onion, carrots, and celery in oil or butter for 4-6 minutes.
  • Add vegetables, garlic, broth, and poultry seasoning to the slow cooker and stir.
  • Cook on low for 6-7 hours or high for 3-4 hours until vegetables are tender. Puree 2 cups of the mixture and return to the cooker.
  • Stir in shredded turkey and cream, then cook for an additional 30 minutes. Add peas or greens in the last 10-15 minutes.
  • Adjust salt and pepper to taste before serving.

Notes

For a creamier texture, blend a portion of the soup before returning it to the slow cooker.
