A comforting and hearty soup combining tender turkey, vegetables, and rice in a flavorful broth.

Ingredients

Vegetables

  • 1 Tablespoon olive oil
  • 1 yellow onion yellow onion (diced)
  • 3 carrots carrots (peeled and sliced)
  • 3 celery stalks celery stalks (sliced)
  • 1 teaspoon garlic powder
  • ½ teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 cups chicken broth
  • 1.5 cups cooked turkey (shredded)

Garnish

  • fresh thyme (for garnish)

Instructions 

  • Sauté the veggiesHeat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5-6 minutes until softened.
  • Add the seasoningSprinkle garlic powder, thyme, salt, and pepper. Stir for 30 seconds.
  • Pour in broth and add riceBring to a boil, then stir in rice.
  • SimmerReduce heat to low and simmer uncovered for 18-20 minutes until rice is tender.
  • Add turkeyStir in shredded turkey and simmer for 5 minutes.
  • ServeLadle into bowls, garnish with fresh thyme, and serve hot.

Notes

Use leftover cooked turkey for best flavor.
