A hearty and nutritious soup featuring tender turkey meatballs, vegetables, and wholesome grains, perfect for a comforting meal.

Ingredients

Broth and Water

  • 10 cups chicken broth (or stock)
  • 6 cups filtered water

Grains

  • 1 cup barley (rinsed and drained)

Vegetables

  • 5 medium potatoes (chopped into ½-inch cubes)
  • 1-2 medium carrots (grated)
  • 1 medium onion (finely diced)
  • ½ lb mushrooms (about 7 mushrooms)

Canned Goods

  • 1 can white beans

Seasonings and Oils

  • 1 Tbsp Mrs Dash Seasoning (original or garlic flavored)
  • 2 Tbsp dill
  • 1 tsp salt (plus more to taste)
  • 1 Tbsp olive oil (to saute mushrooms)

Meat and Eggs

  • 1 lb ground turkey (can use up to 1 1/2 lbs)
  • 1 large egg
  • 1 tsp Mrs. Dash
  • 1 tsp salt
  • ¼ tsp freshly ground black pepper
  • ¼ medium onion (finely diced)

Instructions 

  • In a large pot, combine chicken broth, water, and barley. Bring to a boil.
  • In a skillet, heat olive oil and sauté mushrooms, onions, and carrots until tender.
  • Mix ground turkey, egg, Mrs Dash, salt, pepper, and diced onion. Form into small meatballs.
  • Add meatballs to the boiling broth along with sautéed vegetables and white beans. Simmer until meatballs are cooked through, about 20 minutes.
  • Adjust seasoning with additional salt if needed. Serve hot.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
