Ingredients

Vegetables and Aromatics

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced

Main Protein

  • 1 pound lean ground turkey

Canned Goods

  • 1 can pumpkin puree (15 oz/425g)
  • 1 can crushed tomatoes (15 oz/425g)
  • 1 can kidney beans, drained and rinsed (15 oz/425g)
  • 1 can black beans, drained and rinsed (15 oz/425g)

Spices and Broth

  • 2 teaspoons ground cumin
  • 1.5 teaspoons chili powder
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon ground cinnamon
  • to taste Salt and pepper
  • 2 cups low-sodium chicken broth

Optional Toppings

  • 0.25 cup sour cream or Greek yogurt

Additional toppings

  • diced avocado

Instructions 

  • Heat olive oil in a large pot over medium heat. Cook onion for 3–4 minutes, then add garlic and cook 30 seconds.
  • Add ground turkey and cook until no longer pink, about 6–8 minutes, breaking it apart.
  • Stir in pumpkin, tomatoes, beans, spices, and broth. Bring to a boil, then simmer for 25–30 minutes.
  • Optional: Stir in sour cream or Greek yogurt before serving. Ladle into bowls and top with avocado, cilantro, cheese, and lime.
